During the Spanish Colonial period, San Antonians used to gather near San Fernando Cathedral to sell produce and livestock. This area, known as the Haymarket, inspired the NIOSA version. Facades and colorful banners resembling those from the farmers' markets of old adorn the NIOSA market. Chili Queens serve up Chili, paying homage to the women who sold their "chili-like" stews in the hay markets of yesteryear. Haymarket was added to NIOSA in 1981.
